Celebrate spring with this twist on the paloma cocktail. Here we use strawberry, honey and chamomile tea to make one refreshing drink!

Ingredients

For the chamomile honey syrup:

  • 3/4 water

  • 1/3 cup honey

  • 1-2 chamomile tea bags

For the drink:

  • 3 ounces fresh grapefruit juice (about 1/2 a grapefruit)

  • 2-4 tablespoons chamomile honey syrup (add more if you want it sweeter)

  • 4 fresh strawberries, sliced

  • 2 ounces of tequila

  • sparkling water for topping off

  • crushed ice

Instructions

For the chamomile honey syrup:

  1. Combine water and honey in a small saucepan and bring to a low boil. Simmer for one minute and then remove from the heat.

  2. Add the tea bag to the mix, cover and steep for 5-10 minutes. Remove the tea bag and place syrup in the fridge to cool.

For the drinks:

  1. Pour tequila, grapefruit juice, chamomile syrup and strawberries into one glass. Use a muddler to gently muddle the strawberries.

  2. Top off the glass with crushed ice and sparkling water.

  3. Give it a little stir, and cheers!
