Best Bites: Avocado breakfast burrito

Your mornings just got a yummy upgrade with these homemade breakfast burritos. Made with crispy bacon, juicy tomatoes and eggs, this quick and easy breakfast will jumpstart your day. It's perfect for meal prep or busy mornings!

Ingredients

  • 1 cup roasted potatoes

  • 1 avocado, sliced

  • 4 bacon slices, diced

  • 1/2 onion, chopped

  • 1 red pepper, chopped

  • 1 poblano pepper, chopped

  • 1 cup corn

  • Salt and pepper

  • 8 eggs

  • 1 1/2 cup cheddar cheese

  • Cilantro

  • Tortillas

Directions

  1. In a pan cook bacon until crisp.

  2. Drain bacon.

  3. Cook onions, peppers and corn.

  4. Sprinkle salt and pepper.

  5. Stir, stir, stir!

  6. Plate veggies.

  7. Whisk eggs in a bowl.

  8. Add in cheese.

  9. Add a dash of salt and pepper.

  10. Scramble, scramble, scramble!

  11. Top with cilantro.

  12. Add eggs, veggies, potatoes and bacon.

  13. Top with avocado.

  14. Roll burritos.

  15. Enjoy!
