The taste and texture of this bread is similar to English muffins but made easy in the bread machine
ingredients
1 1/8 cup warm water
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
3 cups white bread flour
3 tablespoons nonfat dry milk
1/2 teaspoon fast-rise yeast
OR
2 teaspoons active dry yeast
directions
Put all ingredients in machine in the order suggested by your machine's manufacturer and set to regular bread or fast cycles.

The top of the loaf should come out sunken, this is normal. The texture and taste is just like English Muffins, this is GREAT for toasting!

lumberladyjan Had the same exact problem getting out of bread machine. I have made countless loaves since getting bread machine in 1992 and never had a problem. Will try a tablespoon of Butter next time.

Had a very tough time getting this out of my bread machine pan. There is no fat at all in this recipe, don't know if that was the reason. Very misshapen after having to pry it out. Wonder if I should have sprayed the pan . Have been using my machine for years (over 13) and never had this happen before.

Hi, Could you please verify that 1/2 teaspoon of Fast Rise Yeast is the correct amount for this recipe? Thank you and thank you for all of the wonderful recipes.
The typical ratio of fast/instant yeast to active dry is 1:4 so 1/2 teaspoon of fast rise should be correct. Also, none of the other reviews indicate a problem with any quantities so you should be ok to use that amount.

I really wanted to bake a loaf today but had limited items in my pantry. This recipe fit the bill and made a wonderful loaf of tasty, crusty bread. I set my machine to med crust and drizzled with olive oil at the end of the rise cycle. I must admit that the only baking soda I had in the house was already deodorizing the fridge, so I used 1/2 tsp of baking powder in its place. It didn't make the loaf bitter at all, but it seemed like it needed a bit more salt. I can't wait to try it again with the right ingredients. This recipe is a keeper for sure!
